Step-by-Step Smoking Guide
1.Remove the Membrane:
Flip the ribs bone-side up. Use a butter knife to pry up the silvery membrane on the back, grip it with a paper towel, and peel it off entirely. This ensures your seasoning penetrates the meat.
2.Apply the Rub:
Apply an even coat of Dillo® Dust to both sides of the ribs. Let them sit at room temperature for 30 minutes while the smoker preheats.
3.Phase 1: Smoke (3 Hours):
