Crispy Pork Tenderloin Medallions with Dillo® Hen & Hog
Pork tenderloin is one of the easiest cuts of meat to turn into a restaurant-style dinner. Cutting it into medallions increases the surface area for browning while Dillo® Hen & Hog Seasoning creates a savory crust.
Ingredients
- 1½ pounds pork tenderloin
- 2 tablespoons Dillo® Hen & Hog
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 garlic cloves
- ½ cup chicken broth
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- Fresh parsley
Instructions
- Remove silver skin from pork tenderloin.
- Slice into approximately 1-inch medallions.
- Gently flatten each piece.
- Season both sides generously with Hen & Hog.
- Heat olive oil in a skillet over medium-high heat.
- Sear medallions approximately 3 minutes per side.
- Remove pork and set aside.
- Add butter and garlic.
- Stir in chicken broth, Dijon and honey.
- Simmer until slightly thickened.
- Return pork to skillet and spoon sauce over the medallions.
- Garnish with parsley.
